Zuke the world


In the summer an aging housewife's fancy turns lightly to thoughts of zucchini and what the heck she's going to do with the 837 pounds of it sitting on her counter and her porch and her desk and her bed. Girls, I finally figured this one out.

You cut it all up and cook it in a big pot until it reaches the sludge stage. Add some water first so you don't have to take it back out of the big pot and pick out all the scorchy pieces on the bottom. :P

Drain it and puree it in the blender and then treat it like canned pumpkin. Or freeze it and treat it like canned pumpkin later. Or can it in your pressure canner (pressure canner only) and treat it like canned pumpkin later. The point is, treat it like canned pumpkin. Never buy canned pumpkin again.


WOW that's an ugly pie.

I'm tempted, because I love zucchini, but I think I'm too wimpy to make a pie that ugly.

I've read canned pumpkin or rather canning pumpkin is not recommended. Hmmmm.....something about being able to get it hot enough? Do tell if you have successfully done this as we always have TONS of pumpkin and squash and being able to can it instead of freeze it would be grand.

And yes that is one ugly looking pie, but did it taste great?

Thanks Glenda! I watered and weeded my zucchini today and the pumpkin and squash will be in the next few days. Have fun y'all! Let us all know if the zucchini drives you mad anyway!

Ugly pie=GONE. And there were some skeptics.

We don't grow any zucchini, it just comes to us.

I can't really speak to the canning question; I just assumed that squash types are not acidic enough for water bath canning.

The less labor intensive way to get rid of zukes: quarter 'em, coat with a bit of olive oil or some Italian dressing, and grill! Mmmmm...

Wait, did you peel it first? From the pic it looks like there might still be some peel in there, which reduces the labor quotient ;)

RM, this is what I do AFTER I've gotten as many into people via normal means as possible. No peeling, although I did scoop some spongier middles.
